Vinification
The grapes were destemmed immediately after harvest, after which the must, together with the berry skins, was transferred into a vinificator, where it macerated for 5 days at 8 °C. This was followed by pressing and static sedimentation at 8 °C. Fermentation took place in large wooden barrels at an uncontrolled temperature. The wine was aged in wooden barrels for 12 months and then transferred to stainless steel tanks until bottling.
